Smoke from the Washington fires. I took this picture 3 or 4 days ago. I woke up to the smell of smoke and a haze in the sky and over the lake. We are probably 70+ miles from the fires so no worries here yet. DSC_0032

Like I’ve shared, we have some wonderful neighbors here. A neighbor who lives down the hill from us about 10 minutes away, let Matthew and the girls pick all of these apricots this morning. She’s a 90 year old woman who blesses all her neighbors with plums, cherries and apricots every year. What a kind woman and are we excited about these apricots!

They look perfectly ripe but they need a day or two before we start pitting them and freezing them. We have them in the screened porch area to help ripen them up. They are free stone so the pits come out in about 1 second. I can’t imagine how many pounds of apricots we have here. I won’t need to buy fruit for some months now. Thank you so very much Judy!!!

  1. Lovely photos. What are you going to do with all those apricots? Do you freeze them just as they are? I was under the impression that one had to cook before freezing. I used to make fruit smoothies mixed with orange, apple and banana. I also made crumbles, jam and compote (no sugar) to serve with chicken, pork or ice cream…

    • We’ll just freeze them as they are. We will go through them fast enough that we don’t need to cook them. I try to avoid cooking fruits when possible. I love freezing things… they’re just fresher when you use them. I have made a apricot coffee cake for the family for all of their hard work of going through the apricots and pitting them. They’ve been great in smoothies and just to pick up and eat. : ) They are going to pick the rest of them tomorrow morning.
