We try to make things from scratch as much as possible. It is not only better for us, it is cheaper too. I make this wonderful mayonnaise with extra virgin olive oil, safflower oil, a little lemon and Himalayan salt. I use a Cuisinart hand stick blender and pour the oil in slowly, it is finished in 2 minutes or less. It keeps well for a couple of weeks and with added whey from homemade yogurt, it keeps much longer.
